The grill shop has been operating non-stop for almost 90 years and continues to offer us delicious souvlaki rolls and much more... The wide variety of fresh meat cuts daily and the amazing minced and cut meat skewers have made Lambros Grill a standout.
How it all started
Manolis Mores was born in 1914 to parents from Asia Minor. From a very young age he started working in several jobs but much more as a “maounieris” (maouna means barge) but also as a baker. In those years on the island, people worked together harmoniously for a living: one person did the grilling, another served, another made coffee and, in the end, they split the earnings.....
Manolis Mores started as a turnspit in a shop at the harbour owned by Michalis Seferoglou and a Muslim. Having worked non-stop, a few years later, he decides to buy the shop of his one-time boss Machairas, to make a new start. With a lot of passion and love for his work he began making delicious grilled meats, including the amazing souvlaki of "Mores"!
Family
Spending beautiful moments that are still remembered by his family and other Kosians, Mr. Manolis served thousands of souvlaki rolls for many years to the young and the old who nostalgically remember those beautiful and pure times on our island. The years passed and too much charcoal and age got him tired and led Mores to close down the harbour shop. Many at the time may have thought that the benevolent harbour grill master and his grilled meats had come to an end, but they were quickly proven wrong.
In the early 1970s, Lambros Maragos came to Kos to work, met Mores’ daughter Dionysia and in 1973 they married and had 3 children (Eleni, Christos and Manolis). Lambros, a master of mosaics, never hesitated to take risks. Having the secret recipe in his drawer, he opened a new grill shop (Lambros) in the footsteps of the old then Mores
From the beginning until now
From 1981 to 2001 Lambros and Dionisia worked at the grill and offered the people of Kos, along with their food, endless and pleasant moments of fun, singing and often dancing. In 2001 the family decided to take its business a step further and moved the grill shop to a new and bigger space always aiming for the best. The new generation of the family timidly started to provide services, learning the art of the traditional Mores souvlaki, which has been served for years in the traditional lagana bread.
.The three brothers, continuing the tradition of their grandfather and their parents, did not give up when their parents decided to retire in 2011. They took the business in their hands, which was difficult given their young age at the time. Youth usually has more energy and carefreeness and when combined with passion and love for the work, always with respect to the customer, success is a given. A good recipe is not enough. Its constant and uninterrupted “execution” is necessary to make it always taste appetizing and delectable! The souvlaki of Mores or Lambros for the younger generation, is now known across Greece and Europe since over the years it has gained avid fans, both Greek and foreign.

Quite a few times this souvlaki has been carried in luggage to be taken abroad or to Athens. A few years back a group of Cretan students studying in England did not hesitate to take several souvlaki rolls with them because they would miss them, as one of them told us. At the regular airport check something alarmed the security guards and made them check the students’ luggage. They burst out laughing as the entire hall smelled of tzatziki for a while... from the dozens of hidden souvlaki rolls…
